I'm thrilled to finally share something I've been working on for years: lavender + honey caramels made with local ingredients from right here in California's Central Coast.
The Journey to Perfecting a Handmade Caramel
Some flavors come together quickly. Others? They're a challenge.
This caramel definitely falls into the challenging column. I first attempted it years ago—and it was awful. I was certain I didn't have the stamina to figure it out, so into the 'No' pile it went for many, many years.
But I couldn't stop thinking about it.
Supporting Local: Real Ingredients from California Farms
Last year, everything changed when my friend Gina Hambly, owner of a lavender farm in the hills of San Miguel, CA, started educating me on culinary lavender. Her knowledge, paired with an introduction to local beekeeper Thomas McCall of Sierra Honey Farm, re-ignited my pursuit.
I was determined to create a perfectly balanced lavender + honey caramel using real ingredients from local producers.
From Testing to Triumph
Last spring, I took it to a show—well received, but still not perfect. This winter, I tried again. After many batches, I finally perfected the recipe.
Last month, I brought it to another show and was overwhelmed by the response. Customers were calling and emailing afterward asking where they could buy more!
